make this a clever way to sneak in more vegetables to your diet.

I overindulged in dim sum once again yesterday, as
such, I need to be a good girl diet-wise today. I have a super healthy and easy
recipe for you, that is, brown rice with green peas. It is a clever way to jazz
up normal boiled rice. It is also great to sneak in more vegetables to your
diet!
You cook the rice as you normally would, just add in
some seasoning and the peas. The seasoning used here is mirin, light soy sauce and
salt. If you are not vegetarian you can use some chicken stock.
I usually have this with stir fried vegetables.
Veggies on top of more veggies. Go for it, it’s good for you!
Brown Rice with Peas
Adapted from Harumi’s Japanese Home Cooking
Prep Time: 5 minutes / Cooking time: 30 minutes (in rice cooker) /
Yields 5 servings
Ingredients
320gm
Brown Rice (uncooked)
200gm
Frozen Green Peas
400ml
water
1
Tbsp Mirin
1
Tbsp Light Soy Sauce
1
tsp Salt
Tomato
slices (for garnishing)
Method
1.
Wash the rice and place in a rice cooker.
2.
Add in water, mirin and soy sauce. Cook in the rice cooker.
3.
Just before the rice is cooked (maybe the last 10 minutes of cooking time) add
in the green peas and season with salt.
4.
Once cooked, stir through and taste. Add more salt if needed.
Recipe Notes
If you are not vegetarian, you can add 1 tablespoon of
granulated chicken stock into the water or use homemade chicken stock, instead
of the water. Adjust the salt according to taste.
