So simple and delicious |
Cooking for one can be a chore sometimes. As my better half is away from home this week, I needed some quick and easy dish ideas. Spend less time in the kitchen and more time watching Mad Men. In times such as these, a quick one pan dish is a definite must.
As I was looking despondently at the sad and few ingredients in my refrigerator, I decided to combine some butternut squash and coriander for a quick meal. I added some chilli for some heat and the combination worked well. The bright colours are an added bonus as well, plenty of antioxidants!
Prep 15 mins / Cooking Time 15 mins
You will need one lidded saucepan
150gm Chicken Breast (cut into cubes)
500gm Butternut Squash (or 1 whole small Butternut Squash) (cut into cubes)
1 Chilli (seeds removed and sliced finely)
5 sprigs Coriander (stalks removed and leaves diced finely)
2 cloves Garlic (diced)
1 1/2 Tbsp Light Soy Sauce
1 tsp Salt
Dash of White Pepper
1 Tbsp Oil
200ml (approx) water
Method
1. Heat oil and stir fry Garlic til fragrant, then add in Chicken cubes and Soy Sauce. Stir fry til chicken is browned and aromatic.
2. Add in half the Water as well as half the Chilli and Coriander, add in the Butternut Squash.
3. Cover the pan and let everything simmer on medium high heat for 10 minutes. Half way through the simmering time, do add the rest of the water to prevent the mixture from drying up. The dish is supposed to have some sauce, not swimming in water, but you can always adjust the water content to your preference.
4. After 10 minutes, the Butternut Squash should be soft enough to be pierced with a fork. Add the Salt and the Pepper. Just before removing the pan from the heat, add in the remainder of the Chilli and Coriander and stir through.
5. Dish out and serve.
