Hello and I hope you are having an awesome weekend!

The recipe for today is herbed turkey meatballs. These meatballs use oats instead of breadcrumbs. I was intrigued by the idea of substituting breadcrumbs with oats in a recipe for meatballs, however, now that I have tried it, I am not going back to breadcrumbs. Why? I guess because it is better for you since it has more fibre and taste wise, it does not pale in comparison with meatballs that use breadcrumbs.

I also used ground turkey mince here in the hope of making it leaner. Generally, I do use turkey mince for all recipes that call for it. To be honest, it is of course drier than beef mince, but if you want something that is healthier for you and with less fat, well, something’s got to give! I cooked them on a ceramic grill pan with a tablespoon of oil brushed on.

You can serve this as an appetiser or tapas style dish, or have them with pasta with your favourite tomato based pasta sauce. I just had them with some tomato sauce for dinner.

Recipe for Herbed Turkey Meatballs using Oats
Prep Time: 10 minutes / Cooking Time: 15 minutes / Makes 20 large meatballs

Ingredients
550gm Ground Turkey mince
1 Tbsp Vegetable Oil
3 tsp Garlic Powder
3 tsp Paprika
3 tsp Basil
2 tsp Oregano
3 stalks fresh Parsley (chopped finely)
1 medium egg
50gm Oats
¼ tsp Salt
½ tsp ground Black Pepper
2 stalks fresh Parsley (chopped finely for garnishing- optional

Method

1. In a deep bowl or dish, combine all the ingredients together. Mix well with your hands and then pinch the mixture and roll into balls with your hands.

2. Brush some oil onto a grill pan, and place the meatballs on. Don’t overcrowd the pan. Cook on medium-high heat for about 5 minutes, turning the meatballs over until all the sides have turned golden brown. Reduce the heat to medium-low and leave to cook through to the middle for 6-8 more minutes. Remove from heat and serve.
