Absolutely delicious noodles with a hearty meat sauce.
Serve with some healthy kale or other veggies for a complete meal.
Are you enjoying the World Cup? I know I have! Even if
you are not into football, you look out for the World Cup advertisements. Some
are so hilarious, while others resemble a mini movie. Definitely worth looking
out for.
With summer and all the football, I need to make meals
even easier and faster. So on these warm summer days, I have been cooking quite
a fair bit of these noodles with meat sauce.
It’s already a quick and easy to make meal as it is.
However, I like to cook up a bigger portion of the meat sauce and refrigerate
the leftovers. That way, all you have to do for another (even quicker) meal is
boil up some noodles and heat up the sauce. You will be able to serve dinner in
less than 10 minutes. It really is all about the prep.
Here, I added some blanched kale and layered it on top
of the noodles, followed by the meat sauce. Let me tell you, it’s a great way
to eat your kale!
You can use any noodles you like, but I used fine egg
noodles here. It also goes well with some vermicelli. I hope you try it!
Noodles with Meat Sauce
Prep Time: 20 minutes / Cooking time: 15 minutes / Serves 3
Ingredients
For Marinating the Minced Pork
500gm
Lean Mince Pork
1
Tbsp Dark Soy Sauce
1
Tbsp Light Soy Sauce
1
tsp Salt
1
tsp Pepper
1
tsp Garlic Powder
3
Stalks Coriander (Stems and Leaves – finely chopped)
½
tsp Sesame Oil
Ingredients for
Meat Sauce
3
cloves Garlic (diced)
4
Chinese Mushrooms (soaked until soft and then sliced)
1
Green Bell Pepper (seeds removed and chopped into small pieces)
1
Tbsp Dark Soy Sauce
½
tsp Salt
1
tsp Garlic Powder
1
½ Tbsp Cooking Oil
½
tsp Sesame Oil
100ml
Water
3
Stalks Coriander (Stems and Leaves – finely chopped) for garnishing

Kale - Blanched

nests of fine egg noodles (cooked according to package instructions)
Method
1.
Cook the noodles in a pot of water according to the package instructions. While
waiting for the noodles to cook, marinade the mince pork. Set aside.

Once the noodles have cooked, removed from pot. Blanch the kale in the boiling
water, once cooked, drain and set aside.
3. Heat the oil in a wok. Once hot sauté the garlic. Add in the Chinese mushrooms and stir for about 2 minutes. Add in the mince pork. Keep cooking on high heat. Once the mince pork has cooked and turned a nice caramel colour, add in the green bell pepper. Sauté briskly and add in the rest of the seasoning. Add some water and lower the heat to medium high. Let it simmer for about 3 minutes then switch off the heat.

In a plate, layer the noodles, followed by the kale and top it off with the
meat sauce. Garnish with chopped coriander. Mix everything evenly before
eating.

DeleteMeat + noodles = two of my favorite things! This looks so incredibly good and is just packed with flavor! I love how you worked the kale into it. It kind of reminds me of my Italian meat sauce only with different seasonings.
