Hi everyone!

I have been so busy with college and I absolutely love every minute of it. I just had my mid-term practical assessment and it went well! I was so nervous before it, I was waking up in the night reciting the different muscles each exercise would work. The upright row works the trapezius, anterior deltoids, medial deltoids and the biceps! So on and so forth. It’s good stress I assure you.

Since I was having my mid-term break, I was looking up new recipes to try and I thought I would make this sesame chicken. Oh, it goes so well with rice. Make more sauce if you want, you will not regret it.

It is officially the end of summer and the weather has certainly gotten rainier and slightly colder. I always want soup on gloomy days, I find that it is a real comfort food.

This soup is so easy – really, you can count the ingredients, 5 in total, not including the water. I used raw blanched peanuts here, the ones you can buy from the Oriental shop.

In Malaysia, I used a different variant that is specially for boiling soup. It is much softer but I can’t seem to find it here in the UK so this will have to suffice. You can use beancurd sticks if you prefer, though those are slightly harder and hence you would have to boil them a little longer.

In further news, I am going back to college. I will be starting my first day at Loughborough College tomorrow and I am so excited. Sure I am twice the age of most of the students but I have not felt so happy and excited in a long time. I don’t ever recall feeling so happy or excited when I enrolled for my A Levels and or University half a lifetime ago. I will be training to be a gym instructor, it will be tough so, wish me luck! Hello folks!

Guess what? I just had my first experience of an exploding watermelon. I went to bed and the watermelon was fine and sitting pretty on my kitchen counter. In the morning the husband is shouting “Oh No, Oh NO!” I ran down to the kitchen and was greeted by a watermelon mess. Dripping down the counter and flooding the kitchen floor with watermelon goo. Since I had to clean everything up I thought it was a sign that I should mop the whole kitchen up as well. Boo.

So now that my kitchen is back in a clean state let us talk about this noodle dish. I made this fried noodles a few nights back and you must try it. Really. You just must.

It is truly a quick mid-week or an any time super fast of meal. Home made fast food. Delish.

For those who are wondering, XO sauce is really a savoury Chinese seafood based sauce. You can certainly make it yourself but for other mere mortals such as myself, you can buy it ready made.

Since we are talking FAST meal here, I added half a bag of ready packed stir fry vegetables. Of course if you prefer, you can chop up your own favourite veggies and add them in. I also used ready peeled prawns, but once again, if you want to use chicken, tofu, other types of seafood – go right ahead.

Hello! When you read this I will be in the midst of my house move. So, how am I posting this ABC soup recipe you ask? Well, that is down to the wonders of scheduling posts.

This soup has a catchy and rather funny name considering that it is not an acronym for the ingredients in it. Neither is it anything like alphabet soup.

If you look at it, it is essentially a good nourishing chicken soup. I have been having this soup for as long as I can remember. I think my mother made this for us every other day way back when.

I hope you had a great week and are looking forward to a fun-filled weekend! I am having such a good time watching the World Cup, I tell you, I have been experiencing a lack of voice from all the shouting I have been doing at my TV. It’s a rest day from the football today so I thought I might catch up on my blogging.

Since I have been cooking for one this week, it has been really slow food wise. I cook something and it takes me 2 days to finish the whole lot. It’s good in a way, as that means I have more time to do other things. Ideally, I should be telling you that I have been uber productive and spring cleaned the house and ran a 100 miles but no, it’s more like watching football with the Kardashians and the Fashion Police in between.  

Anyway, one of my easy one-pot meals for one is fish congee. I love congee and always order it when I have dim sum. At home, I make this really easy fish congee with cod fish. It’s just putting everything in a pot and leaving it to boil. I can never refuse a bowl of this comforting congee and I hope you try it for yourself.

Hope you had a fantastic weekend. I had a rather quiet Sunday as dearest husband has gone away on a business trip for a week. Boo hoo. As such, I spent my Sunday doing house chores. The benefit of that is that I didn’t have to do many chores today and could potter about in my little garden.

With summer and all the football, I need to make meals even easier and faster. So on these warm summer days, I have been cooking quite a fair bit of these noodles with meat sauce.

It’s already a quick and easy to make meal as it is. However, I like to cook up a bigger portion of the meat sauce and refrigerate the leftovers. That way, all you have to do for another (even quicker) meal is boil up some noodles and heat up the sauce. You will be able to serve dinner in less than 10 minutes. It really is all about the prep.

Here, I added some blanched kale and layered it on top of the noodles, followed by the meat sauce. Let me tell you, it’s a great way to eat your kale!

You can use any noodles you like, but I used fine egg noodles here. It also goes well with some vermicelli. I hope you try it!

Hello everyone!

How has your week been? I have been besieged with car problems. Well, it was actually a flat car battery. It may seem like a simple enough problem to solve. However, when you add to the mix that the battery is only two months old, was unable to be jump started with the help of many friends and that I do not have an auto recovery/assist service, it quickly gets problematic. After signing up with an auto recovery service provider I had to wait twenty-four hours for the service to be activated before I could request a call out. The problem didn’t end there however, an argument and two visits to the garage later the car battery has finally been replaced at no additional cost. Enough nattering about my car problems, I am glad it is all solved now.

Hello everyone!

Yes, I am back after a long absence! Not sure whether that is a good thing or not for you, but I am hopeful that it is good. 

After a splendid 6-weeks with family and friends in Malaysia where I was truly spoilt rotten, I am back in the UK. The first week was downright busy, just trying to clear stuff and organise our storage space as well as doing some gardening. I planted some bamboo as well as some winter violas. I am now willing them to grow and flourish.
