Hello! When you read this I will be in the midst of my house move. So, how am I posting this ABC soup recipe you ask? Well, that is down to the wonders of scheduling posts.
This soup has a catchy and rather funny name considering that it is not an acronym for the ingredients in it. Neither is it anything like alphabet soup.

If you look at it, it is essentially a good nourishing chicken soup. I
have been having this soup for as long as I can remember. I think
my mother made this for us every other day way back when.
Traditionally, like most Chinese/Asian
soups, the soup is not usually served by itself, but rather it is a component
of a main meal comprising rice, a protein dish and a vegetable dish.
However you can choose to have yours any
which way you wish. As you will notice from the ingredients, it can easily be a
one-pot meal or you can just as easily add pasta or rice. You can also reduce
the amount of pepper or omit it altogether if you want to make this soup more
kid-friendly.
Personally, I love the peppery spiciness of this soup and it is so
nourishing for the soul. I also find that this is such a good weight-loss or “diet”
soup, especially if you have overindulged and just need to go easy a little,
this soup is great. All natural, all so good.
I don’t really know how to categorise this soup as either Asian or

Recipe for ABC Soup
Prep Time: 15 minutes / Cooking Time: 40 minutes
Ingredients
750gm Chicken (skin removed and cut into pieces)
4 Carrots (peeled and cut into 1” pieces)
3 Potatoes (peeled and cut into 1” pieces)
3 Tomatoes (quartered)
1 Onion (peeled and quartered)
1500ml Water
½ Tbsp Salt
½ tsp White Pepper
Method
1. Boil the water in a
kettle (it’s faster). Place the chicken into a deep pot. Pour the boiling water
over it and turn on the heat to high.
2. Bring to a boil,
skim off any scum that rises to the surface. You may need to do this 2 or 3
times.
3. Add in the
potatoes, carrots and onion. Bring to the boil and then lower the heat to a
simmer.
4. Let simmer for 30
minutes before adding in the tomatoes. Do check on the soup periodically while it is simmering.
5. Simmer for a
further 10 minutes, season with salt and pepper to taste. Switch off the heat
and serve.
