Asian Style Salmon Pasta

A simple pasta dish with salmon cooked with Asian inspired flavours for a light and delicious dinner any day of the week.

This pasta is very easy to make. 

Right now, I have been up to my ears with house moving stress. It just seems like one hurdle after another to clear when it comes to this whole house move. Not the smoothest process to say the least.

Let’s see, I have been staying in a little rented studio for the past 2 months now. It’s tiny and I only packed essential cutlery and crockery with me. That means, two plates, two forks..you get the idea. Cooking has been limited to simple meals and one of those meals was this Asian style salmon pasta.

I think pasta is one of the fastest and easiest dishes to cook. As the days are getting warmer now, I like to keep the flavours a bit lighter and fresher. If you are into that too, then you will be happy with this awesome pasta dish. No cream, minimal oil, just great flavours topped off with some zingy lemon.

Asian Style Salmon Pasta by Nomsies Kitchen

Recipe for Asian Style Salmon Pasta
Prep Time: 10 minutes / Cooking Time: 15 minutes

Ingredients
2 salmon fillets (approximately 150gm – sliced into 1.5 inch pieces)
200gm Pasta
2 Tbsp Rapeseed Oil
1 inch piece of Ginger (finely diced)
3 Cloves Garlic (finely diced)
1 Red Chilli (finely diced)
3-4 Tbsp Water
3 Sprigs Parsley (chopped)
Juice from ½ a Lemon
½ tsp Salt
¼ tsp freshly ground Black Pepper
Method
1.     Cook the pasta according to the package instructions. Once cooked, drain and set aside.
2.     Pour the oil into a pan and heat over medium-high heat. Once hot, add in the diced ginger and briskly sauté, before it colours, add in the garlic briskly sautéing. Just before it colours, add in the chilli followed by the salmon. Sauté everything together briskly for about 3 minutes until the aromas come together and the ingredients have coloured slightly.
3.     Quickly add in the pasta and toss evenly. If it is too dry, add some water. Season with salt and pepper to taste. Just before switching off the heat, add in the parsley and toss evenly. Switch off the heat and remove from pan. Just before serving squeeze the lemon juice over and enjoy.
