Hello hello!

I realised that I had some tubs of cream cheese in the fridge the other day and I wanted to use it for some baking. Dear husband of mine loves brownies so I settled upon an easy peasy brownie recipe.

It combines cream cheese, dark chocolate, hazelnuts and Nutella. Are those all your favourite things? If they are, read on!

I baked this brownie in a tart pan, I got the idea from Confectionalism, you should check out Nicole’s site, her baked goods are delicious and she has loads of great ideas too! The tart pan makes the brownie look extra beautiful with the scalloped edges.

The brownie batter is poured into the tart tin. The cream cheese and Nutella mixture is then spooned on top of the brownie batter and swirled through for a pretty pattern and delicious combination. You can further decorate it with some fruits or serve it warm with some ice cream. Am I making you drool yet?

Triple Layer Mango Cheesecake

Allow me to send some virtual sunshine to you, wherever you are :D

Hope you had a great weekend. I sure enjoyed the heat and sunshine we have been blessed with. Tell me what you got up to! I was enjoying the sun outside the Krispy Kreme at the Metrocentre. Dum dee dum.


Anyway, remember the luscious No Bake Strawberry Cheesecake recipe I shared, well, obviously being the sucker that I am, I had bought enough ingredients to make 2 cheesecakes. I know you should only buy what you need, but those 3 for 2 offers always gets me. It makes sense right? Right? 

I wanted to use up those ingredients so I decided to take advantage of the lovely mangoes I have been seeing and serve up a cold and refreshing mango cheesecake. The basics of this recipe are the same as the No Bake Strawberry Cheesecake, just swap the strawberries for 1 medium sized mango. I also added an extra layer of light sponge cake on top of the biscuit base - hence the 3 layers. The sponge cake doesn't contain any butter, and just works really well with the light cream cheese. This cake is really just fabulous on a hot humid day. Make this for your summer parties and it will be be the star of the party.

Since the recipe for the base and cheese layers are essentially the same, I am just going to share the recipe for the sponge cake layer and mango purée topping here.

No Bake Strawberry Cheesecake

Since we are in the middle of Wimbledon fever, I thought of celebrating the season of strawberries and cream with a luscious mousse like chilled strawberry cheesecake. No need to clean the oven - yay! Another great thing about this cake is that you can serve it with a side of more strawberries and cream. Hey, a wise woman once told me that watching tennis burns more calories than watching the Kardashians. I will believe anything at this stage!

I made the biscuit base with Digestives as they were cheaper, but if you can get Oreos - go for it, the colour contrast works for a better looking cake I think. You can also really unleash your creativity decorating this cake. Just be inspired by the strawberries. Make it as simple or as elaborate as you wish. I can't wait to see your photos if you make this :) 

Since it is summer and there are the occasional sunny day, I am thinking of making this again for a potential BBQ. I might make this with a different type of fruit. What do you think?
