Roast Sweet Potato Salad

Roasted sweet potatoes bulks this salad up and keeps you full while the toasted pumpkin seeds add a nutty flavour and gives the salad a nice crunch.

I am always experimenting with my salads and I would like to share this easy peasy recipe with you.

At the start of the week I usually roast a few sweet potatoes and keep them refrigerated. I can then heat them up for a quick snack before the gym or just add them into salads, like I did here. The recipe I use is set out below but feel free to roast them using whatever spices you fancy.

The toasted pumpkin seeds in this salad really gives it a delicious crunchy boost so don’t skip it if you can. The only thing to be careful of is not adding too much. They are so delicious but are also really high in fat so a little goes a long way here.

Hello and happy Wednesday! 

I was admittedly feeling very lazy yesterday. Too many hours stalking my favourite blogs and looking for running shoes online. When it came round to dinner time I raided the pantry and fridge and managed to knock together this sweet potato hash. Yes, it is all in one pan! Saves on washing up multiple pots and pans. Yahoo to that!

If even I can manage this on a super “off” day, I am sure anyone can manage to do this or more than likely, better it!

The sweet potatoes are rinsed and pierced with a fork before being microwaved for 3 minutes. Then I added mushrooms, yellow bell pepper, onion and bacon. Very delicious and I bet you already have most of these ingredients.

For a protein boost you can crack in an egg for each person. Eat it all with some Sriracha sauce, really hits the spot and goes down a treat.

Hello! My best friend is coming to visit me today and I am super excited. I thought I will squeeze in a post first before a week of adventure with her.

Today is healthy doughnuts day. Check out my oh-so simple to make sweet potato doughnuts. Baked, not fried. Gluten free option available too! Ok, you got me – I did coat these doughnuts in sugar syrup but hey, you can always omit the sugar if you want these sugar free.

Since I bought my bottle of maple syrup last week, I have been happily using it. First it was to make Maple Almond Granola and this time, I used it to slather over some oven roasted sweet potato fries.

Sweet Potato Mash with Home Made Baked Beans



I was at the gym today and I observed that some of the staff had to have really quick lunch breaks. Now, I was at the gym, why was I still picking up food vibes? 

Anyway, the point of this story is that even the nice chap manning the front desk had to eat at his desk. I have done it before, and I know how difficult it is trying to eat, type, answer the phone and yes, focus on work while eating. It's really an amazing feat. Most times you have to have food which do not require both hands to eat. That got me thinking about creating a dish which was safe to eat at work, with one hand :D

Just to digress a little, I am a new user on Reddit and have just discovered what the acronym "SFW" stands for. Thank you Urban Dictionary and yes, I am a noob like that.
