Hello and happy Wednesday! 

I was admittedly feeling very lazy yesterday. Too many hours stalking my favourite blogs and looking for running shoes online. When it came round to dinner time I raided the pantry and fridge and managed to knock together this sweet potato hash. Yes, it is all in one pan! Saves on washing up multiple pots and pans. Yahoo to that!

If even I can manage this on a super “off” day, I am sure anyone can manage to do this or more than likely, better it!

The sweet potatoes are rinsed and pierced with a fork before being microwaved for 3 minutes. Then I added mushrooms, yellow bell pepper, onion and bacon. Very delicious and I bet you already have most of these ingredients.

For a protein boost you can crack in an egg for each person. Eat it all with some Sriracha sauce, really hits the spot and goes down a treat.

Sweet Potato Hash with Bacon Recipe from Nomsies Kitchen

Sweet Potato Hash
Prep Time: 15 minutes / Cooking Time: 20 minutes / Serves 2

Ingredients
3 medium Sweet Potatoes (rinsed)
200gm Button Mushrooms (sliced)
1 Yellow Bell Pepper (chopped medium fine)
1 Onion (sliced)
4 slices Bacon
1 Tbsp Vegetable Oil
1 Tbsp Garlic Powder
1 tsp Oregano
1 tsp Thyme
1 tsp Salt
Black Pepper (to taste)
½ tsp Chilli Flakes (optional)

Method

1. Rinse the sweet potatoes and pierce all over with a fork. Microwave for 3 minutes or until cooked. Leave to cool before peeling and cutting into cubes.

2. Heat the vegetable oil in a pan and cook the bacon until crisp. Remove the bacon from the heat and pour away any excess oil, leaving about a tablespoon in the pan. Add in the onion and fry for about 2-3 minutes until fragrant and softened.

3. Next, add in the yellow bell pepper and mushrooms. Fry until slightly cooked before adding in the sweet potatoes. Fry everything together and season with the garlic powder, oregano, thyme, salt, black pepper and chilli flakes (if adding). Leave it on medium high heat for a while to allow to get slightly charred and crispy.

4. Meanwhile, cut the bacon up into little pieces. Add in the bacon pieces just before switching off the heat.
