Vegetarian Hummus Sandwich

Delicious, healthy sandwich that takes all of 5 minutes to prepare!

Hello! How have you been? 

Oh my, I have been having some major ups and downs in the past days! Positives were that I had such a great time when my friends came to visit. On the downside, my husband and I were taking turns to be ill. All in we still managed to have a pretty darn good time with our guests.




We had already planned a trip to Edinburgh and we managed to enjoy ourselves there. We rented an apartment via Holiday Lettings, which is Trip Advisor’s version of AirBnB. We managed to get a superb apartment in a convenient location and at a reasonable rate.
















Most nights we just bought food from Marks and Spencer and ate in the apartment – so easy! However, we did go out for a very good dinner at Devil’s Advocate, which is really just off the Royal Mile but because it is in a little lane or “close”, you do not get many tourists there but more locals. It’s quirky, cosy and definitely worth a visit if you are in Edinburgh.

The highlight of the trip had to be a hike we did in the Pentland Hills. There are many superb routes with varying difficulties but we opted for a conservative 7 mile circular loop starting from the Midlothian Snow Sports Centre and back. We didn’t drive so it was a very convenient 45 minute bus ride from the Edinburgh city centre. The views were spectacular and it’s such a great day trip out of Edinburgh.

When we came back to Newcastle, we had a couple of days more with our guests before they left to further their trip to London and Paris. At the same time, my husband left for a work trip to Germany. So now, the house is so quiet and the fridge is full of leftover food!

With that, I really didn’t need to cook anything for myself. However, I still had to eat and today I made myself a delicious hummus sandwich. Let me be frank and say that I did not make any of the ingredients! I just used up some store bought ciabatta bread and hummus we had bought and was sitting in the fridge. I know it’s kind of cheating as it’s not home made at all, but hey, I like to keep things real here on Nomsies Kitchen. Food bloggers are human too! It took me 5 minutes to make which means more time to catch up with my blogging. Ok, reality check, more like stalking blogs I love and watching E!

This sandwich is great to prep ahead and pack for your lunch. I sliced up some cucumber and tomatoes here but some red or yellow peppers will also make a nice addition. As for the bread, if you don’t have ciabatta, swap it for a bagel or some pitta bread. That will work too.

Recipe for Vegetarian Hummus Sandwich
Prep Time: 5 minutes / Makes 1 sandwich

Ingredients
1/3 of a Ciabatta loaf
1 Tomato (sliced)
1/3 Cucumber (sliced thinly)
3 Tbsp Hummus
Handful of mixed salad leaves
1 Tbsp Olive Oil
Some Black Pepper

Method

1. Pre-heat oven to 200°C and bake the ciabatta for 5 minutes.

2. Meanwhile, slice up the tomato and cucumber. Arrange the salad leaves on a plate and add some of the cucumber and tomato slices. Drizzle some of the olive oil on top of the salad and finish off with black pepper.

3. When the ciabatta is warm, remove from the oven, slice and drizzle the remaining olive oil over the 2 halves. Spread the hummus over and top off with the remaining tomato and cucumber slices. Enjoy.
