Grilled salmon is quick, easy and delicious. Serve
with some grilled courgettes for a tasty meal. This is an absolute staple in my
diet!

What are your plans for this weekend? I hope the
weather will be kind and warm this weekend as I intend to spend some time on my
bike tomorrow.
Last Sunday my husband and I went for dim sum. I
posted this photo on Facebook and a lot of my friends were shocked with the amount
of food that we ordered. Yes, that is just for the two of us. Hehe. I admit, it
is kind of embarrassing that we eat so much. No, who am I kidding, I am not a
wee bit embarrassed. I love dim sum!

Well, to be fair we do not eat like that all the time.
If only.
When we have indulged a bit too much, we often go back
to healthier meals like this grilled salmon dish. We eat this nearly every week
because it is so simple to prepare and it is delicious too.
You can pair it with any vegetables you like. I
usually grill up some veggies like peppers or courgettes. This time I just used
courgettes as I was out of peppers. I added some salad leaves too, just to
ensure I eat my veggies!
You use salt and pepper for the veggies and the
salmon. Grill. Done!
Hmm, now I wonder if I will go for dim sum again this weekend.

Healthy Salmon Recipe
Prep Time: 10 minutes / Cooking Time: 15 minutes / Serves 2
Ingredients
2 medium Salmon fillets
1 medium Courgette (sliced thinly)
2 handfuls of Salad leaves
½ Lemon
2 Tbsp Olive Oil
Salt & Black Pepper (to taste)
Method
1. Pat the salmon fillets dry and season liberally
with salt and pepper. Meanwhile, place the sliced courgettes in a bowl and
season with salt and pepper. Add in 1 tablespoon of olive oil. Mix evenly to coat
the courgettes.
2. Heat up your grill pan and brush a little more
olive oil on the pan. Once hot, grill the courgettes for about 2 minutes a side
until softened and slightly charred. When the courgettes are grilling, place
the salad leaves on a plate. When the courgettes are done, arrange the grilled
courgettes on top of the salad leaves. Top with some lemon slices.
3. Wipe/wash your grill pan and ensure it is dry and
clean. Brush the remaining olive oil on the pan. Make sure it is very hot
(smoking hot) grill the salmon for about 4 minutes on one side. Flip and grill
for 1-2 minutes on the other side (this depends on the thickness of your salmon
fillet – mine were less than 1” thick hence they cooked very quickly).
3. Once done, remove and place on top of the
courgettes. Garnish with some lemon slices and serve.
