Roast Sweet Potato Salad

Roasted sweet potatoes bulks this salad up and keeps you full while the toasted pumpkin seeds add a nutty flavour and gives the salad a nice crunch.

I am always experimenting with my salads and I would like to share this easy peasy recipe with you.

At the start of the week I usually roast a few sweet potatoes and keep them refrigerated. I can then heat them up for a quick snack before the gym or just add them into salads, like I did here. The recipe I use is set out below but feel free to roast them using whatever spices you fancy.

The toasted pumpkin seeds in this salad really gives it a delicious crunchy boost so don’t skip it if you can. The only thing to be careful of is not adding too much. They are so delicious but are also really high in fat so a little goes a long way here.

Thai Minced Pork Salad (Larb Moo)

This is a really delightful and fresh salad, the meat makes it quite filling and satisfying. Eat with some vermicelli noodles or just wrap in some lettuce leaves for a low carb meal.

It is everything you can ever wish for in a salad! Fresh and a little tangy, it tastes so good with some plain vermicelli noodles. It is also totally delicious wrapped up in lettuce leaves as a low carb wrap. You can add in some mint as well. Go on and give this salad a try!

Hello everyone, I hope you are all doing greeaaattt!

I have been busy with the Chinese New Year celebrations last week, which involved quite a fair bit of food to say the least.

This may explain why I am doing a post on salad. I need a break from all the feasting!

It has still been quite cold and gloomy weather-wise. On days such as this you just don’t want to eat a cold salad, right? That’s why I thought this mix of warm and cold salad might do the trick.

You basically stir fry the chickpeas, kale and cabbage together to give you a warm satisfying bite. Then you add that on top of a bed of crisp cold lettuce and mix everything together. The combination of flavours and textures is perfection!

Make this is you are sick of eating plain old cold salads.

Mushroom Salad

For days when you do not want to spend too much time cooking but still don’t want to eat a cold salad, try this wonderful warm mushroom salad with crisp bacon bits. A great salad for summer or even the colder months.

A big hello to you!

Today I want to share a recipe for a gorgeous warm mushroom salad. Yes, it has bacon in it. Hurray!

I don’t know about you, but there are days when I just don’t want to spend too much time cooking yet at the same time, don’t want to eat an entirely cold salad.

It is for exactly those kinds of days when you could use a salad like this. The only cooking involve is sautéing the mushrooms and cooking the bacon. I cook the bacon in a pan, without any oil, just to get it done and slightly crisp.

All you have to do next is open a bag of pre-packed mixed salad leaves – or chop up your salad leaves of choice and layer the mushrooms and bacon on top. I also added some cut sundried tomatoes and topped it off with some chopped parsley – just to get some more colour in for a pretty looking and great tasting salad.

It’s a salad day because I had a huge Sunday Roast yesterday. Just look at that! Crisp crackling as well.

Now you know why I have to “detox” a little today.

This little salad does just the trick. It is super easy and does not require much chopping and dicing. I love this kind of salad.

I added chopped tomatoes and whole cherry tomatoes as I like how the cherry tomatoes go with the rest of the salad so I highly recommend that you add them in. This salad keeps so well in the fridge, just pack it into little containers and you are good to go!

Strawberries and Grilled Vegetables Salad
Look what I had earlier for my lunch! With the current sunny weather we have been blessed with, a super fresh light salad is just what I need. I decided to add the strawberries in not just for colour - but so I can have my fruits and vegetables in one dish. Easy!

This recipe is simply delightful and perfect as a side dish or a light meal. It is simple to make, flavourful and a joy to look at, what more could you ask for :)

You just need to grill some mushrooms and aubergine with garlic, olive oil and balsamic vinegar, then toss together with chopped romaine lettuce and strawberries. Job done. I felt that the grilled vegetables added enough flavour to the salad hence there is no need for more dressing. Just a squeeze of lemon juice to make everything fresh and zingy.
