Hello and happy Monday!

I hope you are having a lovely Monday and that you had a great weekend. It seems that my prayers for good sunny weather were answered and I managed to go for an adventurous bike ride on Saturday. It was kind of tough for me as it was rather hilly. I am not ashamed to admit that I had to push my bike up several hills as I was already feeling like that – (see photo below)


We didn’t go for dim sum this weekend though. Went to our new favourite Chinese restaurant (Blue Moon) instead. Ended the weekend by watching the new movie by Seth McFarland – A Million Ways to Die in the West. Such a wonderfully silly and fun movie!

Enough of my weekend recap and back to Meatless Monday. Today is time for a vegetarian pasta bake. Easy to make, tasty and so filling – especially for a vegetarian dish.

I cooked the vegetables and pasta together first before baking. I find that it just gives the pasta more flavour.

Healthy Salmon

Nomsies Kitchen Healthy Salmon Recipe
Grilled salmon is quick, easy and delicious. Serve with some grilled courgettes for a tasty meal. This is an absolute staple in my diet!

What are your plans for this weekend? I hope the weather will be kind and warm this weekend as I intend to spend some time on my bike tomorrow.


Last Sunday my husband and I went for dim sum. I posted this photo on Facebook and a lot of my friends were shocked with the amount of food that we ordered. Yes, that is just for the two of us. Hehe. I admit, it is kind of embarrassing that we eat so much. No, who am I kidding, I am not a wee bit embarrassed. I love dim sum!

Well, to be fair we do not eat like that all the time. If only.

When we have indulged a bit too much, we often go back to healthier meals like this grilled salmon dish. We eat this nearly every week because it is so simple to prepare and it is delicious too.


You can pair it with any vegetables you like. I usually grill up some veggies like peppers or courgettes. This time I just used courgettes as I was out of peppers. I added some salad leaves too, just to ensure I eat my veggies!



You use salt and pepper for the veggies and the salmon. Grill. Done!

Hmm, now I wonder if I will go for dim sum again this weekend. Stay tuned and I will let you know if I do on Monday!

Hello and happy Wednesday! 

I was admittedly feeling very lazy yesterday. Too many hours stalking my favourite blogs and looking for running shoes online. When it came round to dinner time I raided the pantry and fridge and managed to knock together this sweet potato hash. Yes, it is all in one pan! Saves on washing up multiple pots and pans. Yahoo to that!

If even I can manage this on a super “off” day, I am sure anyone can manage to do this or more than likely, better it!

The sweet potatoes are rinsed and pierced with a fork before being microwaved for 3 minutes. Then I added mushrooms, yellow bell pepper, onion and bacon. Very delicious and I bet you already have most of these ingredients.

For a protein boost you can crack in an egg for each person. Eat it all with some Sriracha sauce, really hits the spot and goes down a treat.
