Vegetarian Burger Patties |
Hey everybody! How was your weekend? Tell me all about the exciting or not so exciting things that you got up to.
I myself went to Sheffield for the weekend. We had to attend a dinner on Saturday night so we thought that we would make a weekend getaway out of it. We managed to squeeze in a walk around the very picturesque Damflask Reservoir in Low Bradfield. It is an easy circular walk with a distance of about 3.8 miles. If you want more of a challenge you can always turn it into a run. We did see quite a few runners doing a couple of loops around the reservoir.
On the food front, whenever we are in Sheffield, we always wind up having Chinese food. Particularly at this place called the Noodle Inn. They have 2 outlets, one on London Road and a newer outlet in the city on Westfield Terrace, which was the one we visited yesterday. The reason we like this place is that they serve humongous portions at very reasonable prices. To demonstrate, here is a photo of their bowl of noodles and a plate of rice with 3 roasties. These are all the size of one portion with each costing £7.50. We always wind up having to take away the remainder, so generally we can get 2 meals out of it.

The yellow split peas add a nice bite to the patties and you can season them with any seasoning that you like. Another thing to love about these patties are though the prep time may seem long, the actual working prep time is hardly anything as you are mostly letting the oven and the hob do the work while you get on with your busy day. You can serve these veggie patties with burger buns, but as I am still recovering from my weekend of overeating I decided to just have them with my cherry tomatoes and lettuce on the side.

Recipe for Vegetarian Burger Patties
Prep Time: 1 hour (including time for baking sweet potato and boiling the yellow split peas/ Cooking Time: 25 minutes / Yields 6 big patties
2 Medium Sweet Potatoes
200gm Yellow split peas
1/4 cup Plain Flour
1 tsp Salt
1 tsp Garlic Powder
1 tsp Paprika
Dash of Black Pepper
Panko Breadcrumbs to coat the patties (maybe 2 handfuls)
Method
1. Pre-heat your oven to 180°C. Rinse and place sweet potatoes on a baking tray lined with some aluminium foil and bake for about 30-40 minutes until the sweet potatoes are thoroughly baked.
2. While the sweet potatoes are baking, rinse and boil yellow split peas on medium heat for 40 minutes until the yellow split peas have softened.
3. Once the Sweet Potatoes are baked, peel the skin and cut into cubes then place the sweet potato cubes in a bowl. Drain the boiled yellow split peas and place in the bowl with the sweet potatoes.
4. Put the panko breadcrumbs in a deep roasting dish and also prepare a baking tray lined with some aluminium foil to set the ready formed patties on. Pre-heat your oven to 200°C.
5. Next, you can start to mash the sweet potatoes and yellow split peas together. You can use a food processor for this step if you prefer. Add in the flour and continue to mash. Then, add in the seasoning. Start to form the patties from the mixture and then coat with the breadcrumbs. Place the patties on the baking tray that you have prepared earlier.
6. Bake the patties for 20-25 minutes until the breadcrumbs have browned lightly. Remove and serve with your favourite sauce and some salad on the side.
