maple syrup for a sweet and salty flavour that is sure to perk up your day.
Hello everybody! I am back on my blog after an extended break. The last
time I blogged was when I was in Manchester. I had saved quite a fair bit of
material to post but then what with slow internet connections and all it just
drove me nuts. The trip to Manchester was followed by a trip to London as my
husband was running the marathon there. When I got home, I managed to pick up a
virus on my laptop and had to get it fixed. Well, happy to say that everything
seems to be working smoothly again - fingers crossed! During all this downtime,
I have been busy spring cleaning my home and also my phone and laptop. It’s
shocking the amount of photos I have accumulated on my laptop and phone. This
will teach me to be more organised. You live, you learn. It’s nice to come back
and start everything afresh though.
In
other news, one of my dearest and best friends is coming all the way from
Malaysia to visit me this week. I have been so excited preparing for her visit!
This lady is pretty awesome, we went to college and then University together.
She has a new found passion in endurance sports and mountain biking. Did I
mention she has also lost 10kg in the past year? Anyway, I am so proud of her
and can’t wait to have an active vacation with her. We will be going to
Edinburgh and have planned some hiking and cycling activities. Can’t wait to
tell you all about it!
I also added hazelnuts (just love the smell of toasted hazelnuts), some flaked almonds and sunflower seeds. All this makes for a really nice nutty crunch. As I always say – add in whatever you like in your granola. It’s really hard to go wrong here.
Recipe for Peanut
Butter Granola
Prep Time: 10 minutes / Baking Time: 40 minutes / Makes approximately 650gm
(equivalent to about 8 servings)
Ingredients
300gm Rolled Oats
100gm Hazelnuts
100gm Almond Flakes
100gm Sunflower Seeds
4 Tbsp Vegetable Oil
4 Tbsp Maple Syrup
4 Tbsp Peanut Butter (smooth)
1 tsp Cinnamon
Method
1. Pre-heat oven to 150°C
and line a large baking tray with parchment paper.
2. In a large bowl, pour in the vegetable
oil. Whisk in the maple syrup, peanut butter and cinnamon. Add in the rolled
oats, hazelnuts, almond flakes and sunflower seeds. Mix the ingredients evenly
and pour the mixture onto the baking tray. Spread it out into a thin, flat
layer.
3. Bake the mixture for 30-40 minutes or
until it has turned golden. Remove from oven and leave to cool. Once cooled,
store in an air tight container.
