Super quick broccoli stir fry with super food goji

Hope you had a fantastic weekend. I had a rather quiet
Sunday as dearest husband has gone away on a business trip for a week. Boo hoo.
As such, I spent my Sunday doing house chores. The benefit of that is that I
didn’t have to do many chores today and could potter about in my little garden.
Since I am cooking for one today, I decided to do
something ridiculously easy and made stir fried broccoli with goji berries. It’s
quite common in Chinese cooking to stir fry veggies with goji berries. If you
haven’t tried it, do give it a go as the goji berries make the dish so sweet.
Stir Fried Broccoli with Goji Berries
Prep Time: 5 minutes / Cooking time: 5 minutes / Serves 2
Ingredients
1
medium head of Broccoli (cut into florets)
2
cloves Garlic (diced)
2
Tbsp Goji Berries (rinsed)
150ml
Water
1
Tbsp Light Soy Sauce
½
tsp Salt
1
Tbsp Cooking Oil
Method
1.
Heat the oil in a wok. Once hot, sauté the diced garlic.

Before the garlic browns, add in the broccoli followed by the goji berries.
Stir fry on high heat briskly. Add in the water, lower the heat slightly and
let simmer rapidly.

Next, add in light soy sauce and salt. Stir fry a bit more then switch off the
heat and serve. The broccoli should still be crunchy and not overcooked. Goes well with steamed white rice or brown
rice with peas.
