How was your weekend? I hope you had a blast or at least some much needed rest and relaxation.
Today for Meatless Monday, I am going to cook a simple and classic pasta dish. I always marvel at how this recipe can be so simple and yet so flavourful and satisfying. More things in live should be this simple. Sometimes we need to just go back to basics.
Serves 2 / Prep Time 10 minutes / Cooking Time 5 minutes
Ingredients
200gm Spirali Pasta
200gm Fresh Button Mushrooms (sliced)
2 Tbsp Olive Oil
3 Cloves Garlic (sliced)
1 Tbsp Chilli Flakes
1/2 tsp Oregano
1/2 tsp Basil
1/2 tsp Basil
1 tsp Salt
1/4 tsp Black Pepper
4 Tbsp Water
4 Tbsp Water
2 sprigs of Parsley (chopped)
Method
1. Boil water in your kettle and pour into a pot, bring the heat up and add plenty of salt. Add in your pasta and cook according to the directions on the packet. Once cooked, drain and set aside.
2. Heat Olive Oil in a pan and sauté Garlic. Quickly add in Chilli Flakes, Oregano, Basil and seasoning. Once fragrant, add in the Mushrooms and sauté. Add the water.
3. Once the Mushrooms have cooked, add in the Pasta and toss until evenly combined.
4. Remove from the pan and garnish with chopped Parsley and more Black Pepper if desired.
