French Bean Omelette |

everyone! I hope you had a lovely festive season and I wish you and your loved
ones a very happy 2014.As
this is my first post in 2014 and it is a Monday, you guessed it, time for a
Meatless Monday post.
One
of my closest friends came over from Malaysia to visit me during the festive
season. We had so much fun entertaining him and we went to York and
Edinburgh. It was my first time in Edinburgh and it must be one of the nicest
cities I have ever visited. The streets just ooze history and character. They
also have very good steak and ale pies. Apart from that we also had friends over a
couple of nights at home too and all that translates to more glorious food! With all
the travelling, cooking and eating, I managed to gain 2kg in the last 3 weeks. I
must now begin my quest to work of that excess weight and make my fat cry.
Although, I do believe that I will end up crying before my fat does.
Coming
back to the recipe of the day, I have for you a French Bean Omelette recipe. I
must say this is a very Chinese version and it is very much a dish that I grew
up eating. No butter required and I love that you combine the French beans and
whisked egg together. It’s always good to have an extra serving of vegetables!
Additionally, the french beans add a nice crunch to the omelette. Eat this with
an extra side of stir fried vegetables and some brown rice. This dish is so easy
and tasty, I just know you will love it.
Recipe for French Bean Omelette
Prep
Time: 3 minutes / Cooking Time 5-6 minutes / Makes 1 medium Omelette
Ingredients

Eggs (whisked)

french beans (sliced finely)
1
tsp Light Soy Sauce
¼ tsp
Salt
Dash
of White Pepper

Tbsp Oil
Method
1.
Heat the oil in a frying pan on medium-hot heat. In a bowl, crack in the eggs
and add the light soy sauce, salt and pepper. Whisk together.

Once the oil is hot, add in the sliced french beans and sauté for about 2 minutes
until the beans are slightly coloured. Pour in the whisked egg mixture. Once
the egg has set, flip it over to brown the other side. Remove from the frying
pan and serve.
This looks delicious! I actually have never cooked an omelet before but this looks really good!
ReplyDeleteHi Marysa, do give it a try - it takes less than 10 minutes, doesn't get much simpler than that. Plus, it has vegetables so more added nutrients for you :)
