Hello everyone! I hope you all had a great weekend. I have to tell you, I went for a total change in hair style and chopped off my long hair. I took more than 4 inches off. I think I posted a photo on my Instagram account. I will need to update all my profile photos in due course. For now, I am loving my new short hair. I have had long hair for over eight years now so it is high time for a change!

Coming back to food, as today is Meatless Monday here on Nomsies Kitchen and it is Pancake Day tomorrow here in Britain, I thought it will be timely to share a recipe for two ingredient pancakes with you!

Two Ingredient Pancakes from Nomsies Kitchen

Pancake Day is the day before Ash Wednesday and the start of Lent. The name “Pancake Day” came about because traditionally, dairy produce like eggs, milk and butter were abstained from during Lent. Hence these produce would be used up by making pancakes.

Now, as you would already gather, my pancakes only contain two ingredients. So, purists might say that my pancakes are not truly pancakes in the traditional sense. However, I am not one to stick to traditions and I have been making these wonderful and easy two ingredient pancakes for the past few years.

Once you try these little babies you won’t want to make ordinary pancakes again.

Here are a few reasons why:

2. Healthier & lower fat – No butter and milk
3. Gluten Free 
4. Paleo Diet friendly

If you like, you can add some vanilla extract and cinnamon powder into the mixture. They are already sweet from the bananas but you can drizzle on some pure Maple Syrup if you like. So, have fun with these pancakes and happy Pancake Day!

Two Ingredient Pancakes from Nomsies Kitchen

Two Ingredient Pancakes
Prep Time: 3 minutes / Cooking Time: 10 minutes
Serves 1

Ingredients
1 ripe Banana
1 Egg
¼ tsp Cinnamon (optional)
¼ tsp Vanilla Extract (optional)
½ Tbsp Cooking Oil / Cooking Spray
½ Tbsp Maple Syrup (optional - to drizzle over)

Method
1. Place banana in a bowl and mash. Add in egg and whisk together.
2. Heat oil in a frying pan over medium low heat. Once hot, pour batter in. Make one giant pancake or divide batter and make 2-3 smaller pancakes. If making smaller pancakes, make one at a time unless you have a huge frying pan that can fit the pancakes in without allowing the pancakes to stick to each other.
3. Cook for 3 minutes or until the middle has set firmly before flipping. Cook for another minute on the other side. Remove from frying pan and serve.
