We are in the middle of yet another week and the end of July. How time flies! I am really enjoying and have been making the most of it by going for bike rides and lazy barbecues.

Today I am going to be sharing a vegetable and vegetarian recipe. I chanced upon this recipe from Oh My Veggies while on my daily Pinterest sprees. This is such a lovely side it is one veggie dish that will have you asking for more.

I like that the green beans are simply roasted. While the beans are roasting away, you fry the Panko with some olive oil and garlic to brown and crisp it up. Once the green beans are done, toss the panko over and finish with some lemon zest and juice. The panko really adds a wonderful crunchy texture to the green beans and the fresh lemon zest and juice just lifts the flavours and makes this one delicious dish. I have not seen green beans disappear off the plate so quickly before!

Recipe for Roasted Green Beans with Panko and Lemon
Adapted from Oh My Veggies
Prep Time: 10 minutes / Cooking Time 15 minutes / Serves 2

Ingredients
250gm Green Beans (trim tops and tails)
2 Tbsp Olive Oil
2 cloves Garlic (diced)
½ Cup Panko
Zest and Juice from ½ a Lemon
¼ tsp Salt
¼ tsp Pepper

Method

1. Pre-heat your oven to 200°C. Toss green beans with 1 tablespoon of the olive oil. Place on a baking or roasting tray and roast for 15 minutes or until the green beans are cooked.

2. Heat the remaining 1 tablespoon of olive oil and sauté the garlic quickly. Before the garlic browns, add in the panko and stir evenly for about 5 minutes or until the panko is nice and browned. Remove and set aside.

3. When the green beans are roasted, place them on a plate and top off with the panko. Sprinkle on the lemon zest and juice to finish.
